Isomalt Mocktail Garnish Looks Like A Hand-Blown Glass & Gives Great Garnish Instagram Game!

Here’s the JAMMM for this week – Just a Merry Mocktail Monday! Have you ever wondered what those beautiful decorations are on cakes that look like blown glass? If you have, it’s Isomalt! 

On this, Just a Merry Mocktail Monday, we will explore this beautiful and advanced garnish, Isomalt! This sugar substitute is made from beet sugar and can be found in a variety of items ranging from hard candies, jams, cough drops, chewing gum, and, my favorite, Sugar Sculpture! Using Isomalt will help you create Over Top Garnishes! 

Just a Merry Mocktail Monday: Creating Isomalt

As intense as the garnish looks, it’s not as hard as it appears!

  • Pour out 10g of Isomalt Crystals 

  • Add a few drops of your desired food coloring

  • Melt over Med-heat until Isomalt is coming melted down and looks like a gel

USE CAUTION!!!

Isomalt breaks down at high heat. Avoid spilling it… you will not want this getting on your skin in its liquid stage

  • Place on a Silicone baking sheet and swirl around to cool and start shaping into the desired shape. (Wait until it cools to manipulate with fingers)

  • To create 3D garnishes, drape the mat over a bottle and hold it to cool

  • Carefully remove some silicone. Once the Isomalt fully cools, it is fragile in some areas and may crack or break

  • Good news, you can always melt more to fix the shape or add to it!
